Trimming a fish involves removing its fins. This is a nonessential procedure, and, in fact, leaving the dorsal fins (fins along the fish’s back) actually helps hold the fish together as it cooks. Still, some people prefer to remove the fins before cooking. To do so, you can just use scissors to cut away the fins at the fish’s sides and along its back.
