The potato is an excellent source of potassium and a good source of vitamin C. It also contains vitamin B6, copper, niacin, magnesium, folic acid, iron, and pantothenic acid. Water makes up 79.4% of a typical potato.

The Potato’s Vitamin C Content

The vitamin C contained in potatoes disappears gradually over time. More than 30% of the vitamin C is lost during the first two months of dark storage at 53°F. After three months of dark storage, only 68% of the vitamin C remains, and after six months, only 50% is left. In the seventh month of storage, the loss of vitamin C starts to stabilize.

The Potato’s Medicinal Properties

The potato is credited with a number of medicinal properties. The raw juice is believed to have antispasmodic, diuretic, sedative, and healing qualities, and is used to relieve scurvy and ulcers. Raw and sliced or grated or converted into starch, the potato is also used to treat inflammations, sunstroke, burns, and chapped skin.
